Chocolate tofu pudding

Ingredients

  • 14 ounces silken tofu (soft, slightly pressed to remove water)

  • 1 cup dark vegan chocolate chips (melted with 1 tbsp
    coconut oil)

  • 1/4 cup cacao powder

  • 1/4 cup pure maple syrup

  • Pinch salt

  • 1 tsp vanilla bean paste (or vanilla extract)

Directions

  1. Remove tofu from package and discard water. Place tofu in a paper town and gently press down to remove and excess water.

  2. Then cut into cubes and set aside. Then, in a medium bowl, add in the chocolate chips and coconut oil and melt in the microwave in 30 second increments until smooth and creamy. Can also melt on the stovetop in a double broiler.

  3. Next, in a blender or food processor add in all the ingredients including the melted chocolate and blend until smooth and creamy.

  4. Pour into containers and top with dairy free whipped cream and chocolate

    shavings if desired and enjoy!

    Remember, with any toppings, stay away from seed oil and processed sugar! They are not your friend!
